Food Pioneers in Chicago <\/strong><\/p>\n Over the years, Chicago has become an exciting food city; people from all over the globe come to experience this abundantly diverse local cuisine. But what most of those visitors don\u2019t know is how much pioneering local fusion restaurants have done to shape the history of world cookery!<\/p>\n Take Yoshi\u2019s Caf\u00e9. Founder Yoshi Katsumura and his wife, Nobuko, migrated from Japan to Chicago, bringing with them their unstoppable entrepreneurial drive. In 1982, they opened the cafe, a pioneer in the craft of Asian fusion cuisine.<\/p>\n Katsumura was born in Ibaraki, Japan. He was only 20 years old when he started his rigorous chef training under Tokyo Iron Chef Hiroyuki Sakai. During this training, Yoshi was inspired by the intricacies of fine French cooking. He moved to Chicago in 1973 and started to make his way up the culinary ladder. Soon enough, Yoshi’s Caf\u00e9 opened its doors. <\/p>\n The public rejoiced over Yoshi’s creations, dishes that featured a distinctive blending of Asian and French textures. The menu epitomized the word \u201ceclectic,\u201d and his melting pot of cuisine and culture created a unique dining experience well-suited to his new home. Food critics characterized Yoshi as a “keen observer of how American culture is changing.” <\/p>\n Yoshi’s Caf\u00e9 also established itself as a leader in community service. After the devastating 2011 earthquake and tsunami hit Japan, Yoshi\u2019s Caf\u00e9 raised $10,000 for relief efforts. In 2014, Alderman Tom Tunney recognized the service of Yoshi’s Caf\u00e9 to the Lakeview community. The corner of West Aldine Street and North Halsted Avenue received the new name: “Yoshi Katsumura Way.” It was one of Yoshi\u2019s proudest moments in a life that ended just a year later. <\/p>\n Now, since Yoshi’s passing, his son Ken Katsumura carries on the legacy of this fine dining establishment. Ken is reimagining Yoshi\u2019s menu with a New American Cuisine twist. New American, for Ken, means the fusion of cultures into a melting pot of rich cuisine. With this melding of Japanese traditions with other American culinary elements, he keeps his family traditions alive while offering his own innovative twist.
